# Directions:

01 - In a large bowl, combine bread flour, kosher salt, and instant yeast. Add warm water and stir until a sticky dough forms. Cover with plastic wrap and let rise at room temperature for 2 to 3 hours, until doubled in size.
02 - Heat olive oil in a large Dutch oven over medium-high heat. Pat beef cubes dry and brown them in batches, approximately 2 to 3 minutes per side. Remove and set aside.
03 - In the same pot, add diced onion and sauté for 3 minutes until softened. Stir in minced garlic, carrots, parsnips, celery, and mushrooms; cook for an additional 5 minutes.
04 - Incorporate tomato paste and cook for 1 minute. Pour in dry red wine, scraping up browned bits from the bottom. Simmer for 3 to 4 minutes to reduce slightly.
