# Expert Tips:

01 -
  • The marinade is so forgiving you can eyeball it and still end up with juicy, flavorful chicken every time.
  • Tzatziki tastes better homemade and takes less than five minutes to whip together.
  • Everything can be prepped ahead, so dinner comes together fast on busy nights.
  • It feels like street food but costs a fraction of what you'd pay at a restaurant.
02 -
  • If you skip squeezing the cucumber, your tzatziki will turn into soup and ruin the pita.
  • Don't overcrowd the skewers or the chicken won't cook evenly, leave a little breathing room.
  • Marinating for less than an hour works in a pinch, but the flavors won't be as deep.
03 -
  • Soak wooden skewers in water for 20 minutes before grilling so they don't catch fire.
  • Let the chicken rest for a few minutes after grilling, it keeps the juices from running out when you bite in.
  • Taste the tzatziki before you serve it, sometimes it needs an extra squeeze of lemon or pinch of salt to wake it up.
