# Expert Tips:

01 -
  • It turns humble broccoli into something you'll actually crave, with crispy edges and a kick of heat that wakes up your taste buds.
  • You can have dinner on the table in half an hour with just one pan and a handful of ingredients.
  • It's flexible enough to eat as a main or turn into a mezze spread when friends show up unannounced.
02 -
  • Don't crowd the baking sheet or the broccoli will steam instead of roast, and you'll miss out on those crispy, caramelized bits.
  • Taste your harissa before you use it, some brands are much spicier than others, so start with 2 tablespoons if you're unsure and add more next time.
  • If your flatbreads are thin, they only need 2 to 3 minutes to warm, so keep an eye on them or they'll turn into crackers.
03 -
  • If your broccoli florets have thick stems, slice them lengthwise so they cook at the same rate as the more delicate tops.
  • Save any leftover harissa oil from the baking sheet and drizzle it over the yogurt for an extra punch of flavor.
  • For a smoky twist, add a pinch of smoked paprika to the harissa and oil mixture before tossing with the broccoli.
