# Directions:

01 - Preheat oven to 400°F. Coat chicken breasts with olive oil, salt, and pepper. Arrange on baking sheet and roast for 15 minutes or until fully cooked. Allow to rest for 5 minutes, then dice or shred.
02 - Combine mixed baby greens, shredded cabbage, julienned carrot, sliced bell pepper, and green onions in a large bowl.
